How Do We Price Our Beef?
 
 

Simple.

We sell Holiday Valley Beef in whole, half, or quarter sizes. We do not sell individual cuts of beef. Our price is based on the hanging weight of the animal and the size of your order. Hanging weight is the weight of the animal after slaughter with skin, horns, internal organs removed. We include the butcher's cut and wratp fees in our price.

Because animals vary in size, hanging weights also vary. The hanging weight of a whole beef is approximately 700 pounds. The hanging weight a quarter will be approximately 170 pounds.

Please note that dry aging, cutting, trimming, and boning will reduce your “take home meat” weight by about 30-40% from the original hanging weight.
